Le cime di rapa insieme al mosto cotto non possono mancare sulla tavola dell’antica Roma. Il defruto (dal latino defrutum) era un condimento a base di mosto utilizzato dai cuochi come salsa nella preparazione di varie pietanze. Il mosto cotto era impiegato in numerose ricette a base di verdure, oltre che come dolcificante.
