Mélange di foglie e piccoli rametti, risultanti dalla materia prima "Aracha" utilizzata per Sencha. Raccolto primaverile aprile/maggio. Pochissima teina, un tè perfetto anche dopo cena che nasce da una tradizione umile: le foglie migliori erano destinate ai ricchi e al contadino non restavano che le foglie grandi e le potature delle piante. Molto popolare anche nella versione tostata, è un tè particolarmente utilizzato nella dieta macrobiotica e ricco di aminoacidi e saponine. Consigliamo infusioni multiple, secondo l'uso Giapponese, con tempi di infusione significativamente più brevi fino all'attenuarsi dell'aroma.
COLORE: Giallo verde chiaro
AROMA E PROFUMI: Vegetale, note leggere di legno e di nocciole
SAPORE: Intermedio tra sapido e dolce, leggere sfumature fruttate
PREPARAZIONE: 2/3 gr. per 200 cc. di acqua alla temperatura di 70-80° lasciare in infusione 2 minuti.
COME BERLO: Da provare in abbinamento a desser cremosi, dolci di riso, piccola pasticceria con frutta secca, fondants e delizie. Ottimo anche con crudités, pesce e al termine del pasto.
