Le foglie lavorate sono le foglie già grandi e sviluppate, dopo la lavorazione come tè nero,vengono affumicate su fuochi di legno resinoso di conifere. Una specialità apprezzatissima dai paesi anglosassoni, con modesto contenuto di caffeina, particolarmente digestivo.
COLORE: Ramato scuro brillante.
AROMA E PROFUMI: Intenso, penetrante di fumo, resine.
SAPORE: Pieno, rotondo, dolciastro.
PREPARAZIONE: 2/3 gr. per 200 cc. di acqua alla temperatura di 90°.lasciare in infusione 3 minuti.
COME BERLO: Per pasteggiare o per il pomeriggio,ma anche come digestivo dopo cena. Bere puro o con una punta di zucchero. Tollera una nuvolina di latte. Ottimo in accompagnamento a piatti salati -per il brunch, la colazione all'inglese. Si sposa perfettamente con pesci affumicati,formaggi, salumi, frutti di mare. Si prepara un ottimo risotto utilizzandolo al posto del brodo.
