Si tratta di un fungo commestibile dalla carne bianca, incorporato in un corpo bianco, grigio o marrone, senza piedi e con una forma che ricorda un ostrica. Può raggiungere i 25 cm di diametro. La sua carne è molto apprezzata sia per il gusto che per la fragranza in Occidente come in Oriente .
Nutrizionalmente, oltre al suo contenuto proteico, si evidenzia per la relativa abbondanza di vitamine del gruppo B, vitamina D e zinco.
Oltre a vari polisaccaridi e proteoglicani, contiene lovastatina (al 2,8 %), ostreolisina, laccasi, lectina e altri peptidi e acidi grassi. La lovostatina è un composto chimico di formula C24H36O5, isolato da Aspergillus terreus e Pleurotus ostreatus, e prodotto anche per via sintetica nel corso degli anni 1980. Polvere bianca, insolubile in acqua, poco solubile in etanolo e metanolo.
