La cima di rapa Fasanese è un ortaggio frutto del lavoro di lunghi anni di selezione operata principalmente dagli agricoltori pugliesi, che prende il nome dall’epoca di raccolta, dalla durata del ciclo colturale e dalla località di coltivazione.
La cima di rapa ha un sapore caratteristico, si consuma esclusivamente cotta, in numerose ricette spesso in abbinamento a purè di fave, orecchiette, fagioli, farinella, ed altre verdure o pietanze.
La cima di rapa si differenzia dalla rapa comune soprattutto per il differente ciclo vegetativo e per la radice, che può raggiungere dimensioni anche notevoli, fino a oltre un metro di altezza nelle varietà tardive.
Le foglie sono generalmente lisce, dentate, allungate e di colore verde scuro; le infiorescenze, quando completamente sviluppate, sono larghe dai 5 ai 10 cm con petali di colore giallo vivo; le radici tendono a svilupparsi piuttosto in superficie.
La semina della Cima Di Rapa Fasanese può essere effettuata o in piena terra o in vaso.
Il terreno deve essere lavorato e si predilige un terreno abbastanza soffice, umido e leggero.
I semi vanno distanziati tra loro di 3-4 volte il loro diametro. Dopo aver proceduto con la semina si passa ad una leggera innaffiatura a pioggia o con un normale spruzzino in modo tale da non smuovere i piccoli semi e successivamente si procede con il compattare il terreno ed eliminare eventuali bolle d'aria.
