La torta di ricotta al forno sa di casa. La frolla friabile si apre su strati di pan di spagna soffice, leggermente bagnato al rum, e su una crema di ricotta vaccina lavorata a mano. Nella ricotta si nascondono gocce di cioccolato che regalano piccoli lampi di gusto ad ogni morso.
Sulla superficie una spolverata di zucchero a velo e una leggera pioggia di cannella: basta avvicinare la fetta al naso per sentire un profumo caldo che riporta alle cucine di una volta. Le fette non sono tutte uguali e va bene così: le irregolarità raccontano che la torta è fatta con le mani, non da una macchina.
