La Torta Mousse di Ricotta è un dolce della tradizione siciliana, costruito a strati che giocano su morbidezza e croccantezza. Un pan di spagna soffice accoglie una mousse di ricotta leggera e vellutata; la superficie è ricoperta da una glassa bianca a base di zucchero fondente e completata con granella di pistacchio che aggiunge una nota tostata e croccante. Al primo assaggio si percepisce l’equilibrio tra la delicatezza della crema e la struttura del pan di spagna, con la glassa che dona una piacevole rottura al palato.
